As you have probably know Easter is on it’s way. This year it is on Sunday, March 31. This also happens to be the day after my son’s 14th Birthday. In anticipation of Easter I have created this cute twist on Easter Cookies. Below is my recipe for mini Hidden Bunny Easter Cookie Cups!
Hidden Bunny Easter Cookie Cups
1 package of sugar cookie refrigerated cookie dough (24ct package)
1 package of pre-made fondant ( I use Wilton)
I package of green candy grass (also by Wilton)
3 cups of butter cream frosting (I make my own but you can use can frosting if you’d like)
2-3 drops of green food coloring or gel
1 drop of pink food coloring or gel
Preheat your oven to 350.
Spray a mini muffin pan with cooking spray. Take the cookie dough and roll one circle of cookie dough in your palm. Place into one well of the mini muffin pan. Repeat process with remaining dough. Bake in over for 15 -17 minutes. Once they are done gently press the center down creating a well. I use my Wilton fondant tool but you can use any kitchen tool that is round on the bottom. Once you have done this with all of the cups let cool completely in the pan.
While the cups are cooling, mix the frosting with the green food coloring and place in a piping bag. ( If you don’t have a piping bag you can use a sandwich bag and cut one corner, it works like a charm!) Fill the cooled cookie cups with frosting and moving in a circle at the top.
To make the bunny roll a quarter sized ball of fondant in your palm. Using a sharp knife cut the ball in half. Take one of the halves and cut that one in half as well. Form the balls as shown above.
Using the end of a paint brush gently roll down half of the little halves of fondant. Then using the sharp knife make 2 cuts on the non-rolled end of the little halves of fondant. This effect creates the paws of your little hidden bunny. For the pink parts take about 1/4 cup of fondant and add the pink coloring. Knead until color is well blended. Then pull off a pearl sized piece of fondant and roll in your palm to make round. For the pads of the feet just take a small piece of the pink fondant and make little rounded squares that will fit on your paws.
Attach the pink parts to the white parts as shown above with water. Just dip your finger in the water and rub it on the back of the piece of fondant you are attaching. Press gently and it will stick. Then place your bunny on the top of the frosting as shown. Open the package of candy grass and take out 3 strands of the candy. Using kitchen shears cut the strands into 1/2 in or so pieces. Stick the candy pieces around the bunny creating the grass.
