Do you tired of the same old breakfast everyday? I know I get that way. But, I don’t like having to spend a lot of time fixing breakfast either. Even though I work from home I don’t spend a lot of time preparing breakfast. I prefer something I can make in a few minutes. Then again, I get bored of the same old cereal, or breakfast drink (my usual go-to options). When I’m in the mood for a fresh, light, but filling breakfast I make these yummy fruit and “cream” parfaits.

What is a Parfait?
Parfait is French for “perfect”(Wikipedia). They can be traced back to France in 1894. A parfait refers to a frozen dessert made from a base of sugar syrup, egg, and cream. It’s stirred infrequently as it freezing. This method allowed them to be made with any special equipment.
Today, Parfaits include any dish that made by layering ingredients with a creamy food such as ice cream, whipped cream or yogurt. We’re focusing on using yogurt since this is a healthy choice for breakfast.
Fruit and Cream Parfait Ingredients:
- Fresh strawberries and blueberries
- Greek Yogurt (my favorite brand is ChoBaniĀ® Vanilla)
- Granola Cereal (pick your favorite)
Instructions:
Spoon in a tablespoon or so of your favorite granola. Follow that with a spoon of yogurt. Top it off with fresh berries. And then, repeat the layers. Garnish with a few sprinkles of granola on the top.
Recipe Tips:
- Serve it immediately as the yogurt and fruit will soften the granola and make it soggy if it sets a while.
- Slice large berries in bite size pieces.
- Substitute Greek yogurt with fresh whipped cream for a sweet dessert.
